Wet Ingredients:
2 eggs
1/4 cup melted butter
2 tbsp. olive oil
1 3/4 cup plain yogurt
Dry Ingredients:
GRAINSTORM Ancient Grain Muffin Mix
1/2 tsp. cinnamon
1/2 tsp. nutmeg
Sugar and cinnamon Mix:
3/4 cup sugar and 1 tsp. cinnamon
1 cup butter, melted
Preheat oven to 375 degrees F. Beat eggs ,butter, olive oil ,and yogurt. In separate bowl, mix Ancient Grain Muffin Mix with cinnamon and nutmeg. Stir all ingredients together lightly. Do not over mix. If batter seems too dry, a little milk can be added. Grease muffin tins and fill. Bake for 15 min. Cool slightly ,then roll into melted butter before dipping into sugar and cinnamon mixture. Delicious when served warm!

1/2 cup melted butter
Directions
1. Preheat oven to 350°F; grease 9 x 13 inch pan.
2. Whisk eggs until light and fluffy looking; add rest of wet ingredients and whisk until smooth.
3. Pour mixture into pan.
4. Sprinkle pancake mix on top of the pumpkin mixture. Use a knife to mix the wet and dry ingredients slightly.
5. Drizzle with melted butter.
6. Bake for approximately 40 minutes, or until dessert is set.
7. Remove from oven and cool. Serve with a swirl of whipped cream, or a scoop of vanilla ice cream! Delicious!!

Wet Mix
4 eggs
1 cup organic sugar
4 tbsp. olive oil
1 cup yogurt (or sour cream)
1 cup milk
Sauce ingredients
2 cups (500 ml) maple syrup
2 cups whipping cream
Directions
1. Preheat oven to 375°F; grease a 9x13 inch pan.
2. Whisk eggs to incorporate some air. Add sugar, oil, yogurt, and milk. Mix well.
3. Gently stir in package ingredients until just mixed. Do not over mix. Spread the batter in 9x13 pan.
4. Sauce: Bring maple syrup and cream to a boil. Remove from heat and pour over batter.
5. Bake for approximately 35 - 40 minutes. (Cake will rise, and sauce will sink to the bottom.)
6. Absolutely delicious if served warm with milk or whipped cream, or best of all, a scoop of vanilla ice cream!
* This recipe can easily be cut in half and baked in 9x9 inch pan.

Directions
1. In a large mixing bowl, beat eggs until light and fluffy looking.
2. Add rest of wet ingredients, and whisk until smooth.
3. Gently stir in package contents. Do not over mix. (Batter may be quite thick. You can add more milk if it is needed.)
4. Finally, fold in the crumbled bacon.
5. Fry on a griddle or in a frying pan at approximately medium heat.
6. Enjoy a warm Bacon Pancake with butter and maple syrup! Scrumptious!!!

4 tbsp. boiling water
2 eggs
1/4 cup butter, melted
2 tbsp. olive oil

Directions
1. Preheat oven to 375°F; grease muffin pans.
2. Dissolve the coffee granules in boiling water. Set aside to cool.
3. Wet mix: Beat eggs until light and fluffy looking. Add remaining wet ingredients, including the coffee mixture, and whisk until smooth.
4. Stir dry mix and wet mix together. Finally, fold in the chocolate chips. Do not over mix.
5. Spoon batter into muffin cups.
6. Bake for 16 - 18 minutes, or until the tops spring back when touched. Do not overbake, or the muffins will be dry.
7. Remove from oven, let set in pan for a few minutes, the remove to cooling rack.

1. Preheat oven to 375°F; lightly grease muffin pans.
2. Wet mix: In a mixing bowl, beat the eggs until light and fluffy looking. Add remaining wet ingredients and whisk until smooth.
3. Final batter: Combine dry mix, wet mix, and shredded apples, folding gently until no dry spots remain. Do not over mix.
4. Spoon batter into muffin cups.
5. Mix together ingredients for streusel topping until crumbly. Sprinkle on top of the muffins.
6. Bake for 16 - 18 minutes, or until the tops spring back when touched. Do not over bake, or the muffins will be dry.

1/4 cup almond milk

3/4 cup chocolate chips
Preheat oven to 350° F.
In mixing bowl, beat all wet ingredients together until smooth.
Gently stir in cookie mix, until no dry spots, then fold in chocolate chips.
Scoop out onto cookie sheets, and bake for 14-18 minutes.
Store in air-tight container for 2-3 days or freeze for longer storage.

Makes 1 large loaf
1. Preheat oven to 400°F; lightly grease 12" cast iron skillet (muffin pans or a regular cake pan will work fine, as well)
2. In a large mixing bowl, whisk the eggs to incorporate some air.
3. Whisk in sunflower oil, yogurt, and milk.
4. Stir in package contents until no dry spots remain. Do not over mix.
5. Gently fold in Jalapenos and cheese.
6. Let batter stand for 1 hour. (not absolutely necessary, but recommended)
7. Bake for approximately 25 minutes.

2 large eggs
1/2 cup butter, melted
1 1/4 cups plain (or vanilla) yogurt
1 tbsp. lemon zest
1 tsp. freshly squeezed lemon juice
2 cups fresh or frozen blueberries
Streusel
1/2 cup reserved muffin mix
1/2 cup brown sugar or sucanat
1/2 tsp. cinnamon
1/4 cup butter
Glaze, optional
3/4 cup icing sugar
1 tbsp. water
2 tsp. freshly squeezed lemon juice
Directions
1. Preheat oven to 350°F; lightly grease an 8 or 9 inch springform pan.
2. Prepare the streusel: Measure out 1/2 cup of the dry muffin mix, mix with cinnamon and sugar, then cut in butter until mixture is crumbly. Set aside.
3. In a large mixing bowl, beat the eggs until light and fluffy looking. Add melted butter, yogurt, lemon zest, and lemon juice. Whisk until smooth.
4. Add package ingredients to wet mix, and fold together gently until just mixed. Do not over mix.
5. Pour half the batter into the pan, then sprinkle with half the blueberries and half the streusel. Pour remaining batter on top, and sprinkle with remaining blueberries and streusel.
6. Bake about 55 - 60 minutes, or until tester comes out clean.
7. Let cool in pan for 10 - 15 minutes, then remove side of pan.
Optional
8. Prepare glaze: Stir together icing sugar, water, and lemon juice until smooth. (May add more icing sugar or water until glaze reaches desired consistency.)
9. When the cake is only slightly warm anymore, drizzle with glaze.
