Red Fife Muffin Mix
Red Fife is a heritage red spring wheat native to Ontario. It was renown in the 1800s for superior taste and baking performance and is one of the grandfathers of modern hybridized wheat. It is a "low-input" grain, meaning it grows well without high input of chemicals. It still yields less than half of modern wheat, but it tastes way better. Especially fresh-ground! Our Red Fife Heritage Muffin Base is the lightest of our muffin bases, both in taste and texture, so it works great for coffee cakes and other treats, but is also great plain as it has a wonderful, delicate wheaty flavour.
Makes 12-16 muffins or 2 medium loaves
Our organic mixes are made in our own dedicated workshop free of nuts, peanuts, dairy or animal products.
INGREDIENTS: fresh whole ground organic Red Fife wheat kernels, organic evaporated cane juice (under 7g per muffin), non-GMO baking powder, baking soda, sea salt.
DIRECTIONS: preheat 400˚F (muffins) or 375˚F (loaves) • in mixing bowl: beat 2 eggs well • add ¼ cup butter melted, 2 tbsp olive oil and 1¾ cups plain yogurt, whisk smooth • stir in package DO NOT OVER-MIX * grease pan, bake 15-20 min for muffins, 25-35 min for loaves DO NOT OVER-BAKE • freezes beautifully • Baking Tips • Recipes • Vegan Prep
