Butterscotch Oatmeal

Chewy, creamy, sweet and dreamy.


  • 1 cup 1869 Oatmeal
  • 2 ¼ cups milk (cow, soy or almond)
  • pinch of salt
  • 1 egg, beaten
  • 2-4 tbsp brown sugar (4 is quite sweet)
  • 1 tbsp butter


  1. in a small saucepan over medium heat, whisk together the egg, milk and brown sugar
  2. mix in 1869 oats, bring to a soft boil then turn down the heat
  3. simmer until thick, about 12-15 minutes, stirring occasionally
  4. remove from heat, stir in butter until melted

makes 3 portions
