Pumpkin Spice Scones

Loaded with warm and spicy goodness, these melt in your mouth pumpkin scones are a must have at your next autumn tea party!

 

Ingredients

1 pkg. GRAINSTORM Oat Scone Mix

1 tsp. ground cinnamon

1/2 tsp. ground nutmeg

1/4 tsp. ground ginger

1/8 tsp. ground cloves

1/2 cup cold butter, diced into 1/2 inch pieces

1/2 cup + 1 tbsp. pumpkin puree, chilled

3 1/2 tbsp. buttermilk

1 large egg

1 tsp. vanilla

1 tbsp. honey

1 tbsp. half and half

3 tbsp. organic cane sugar

1 tsp. ground cinnamon

 

Pumpkin glaze, optional

1 cup organic powdered sugar

1 tbsp. pumpkin puree

1/4 tsp. ground cinnamon

1/8 tsp. ground nutmeg

1/2 tbsp. half and half

 

Directions

  1. Preheat oven to 425°F. In a food processor pulse together spices and package contents until well blended. (If you don't have a food processor, you can whisk by hand in a large mixing bowl, then cut in butter with a pastry cutter.) Add butter and pulse several times to cut butter in to mixture (large pieces of butter should no longer be visible). Pour mixture into a large mixing bowl and create a well in centre.
  2. In another bowl, whisk together pumpkin puree, buttermilk, egg, vanilla, and honey. Pour mixture into well in flour/butter mixture. Gently stir together with wooden spoon until just mixed. Do not over mix.
  3. Dust a work surface with flour, then invert dough on to surface. Pat and shape dough into an even circle about 1 inch thick. Slice into 8 wedges. Transfer wedges to a baking sheet lined with parchment paper. Brush tops with 1 tbsp. half and half.
  4. Mix together 3 tbsp. organic cane sugar and 1 tsp. cinnamon. Sprinkle scones with this mixture.
  5. Bake for 12 - 14 minutes or until toothpick inserted in centre comes out clean. Remove from oven and let cool slightly, then transfer to cooling rack.

Optional,

Whisk together glaze ingredients. While scones are still partially warm drizzle with pumpkin glaze.

Yield: 8 large scones                    Best if served immediately!
