Quick Fruit Cobbler
So beautifully simple and delicious, an authentic pre-industrial dessert that is unbelievably fast and easy to make, and about as healthy as you can imagine! Of course, we like it best with ice cream :-). All you do is make up the usual oat scone mixture, except instead of forming it you crumble it over the fruit and bake. That's it!
Crumble mix
- 1 bag less ½ cup GRAINSTORM Old Scottish Oat Scone Mix
Or mill your own - 1 large egg
- ½ cup heavy cream
- 1 stick (½ cup) very cold butter, grated
Fruit mix
- 1 stick (½ cup) very cold butter, grated
- 6 medium pears or apples, cored and cut into thin slices
- ½ cup scone mix
DIRECTIONS
- Preheat oven to 375°F; grease a 9 x 13 pan
- In a small mixing bowl, beat the egg, add cream and whisk smooth
- Measure out ½ cup scone mix and set aside.
- In a medium mixing bowl, combine remaining scone mix with cold grated butter, crudely, using a fork; then gently mix in egg and cream mixture
- In the pan, combine sliced fruit with remaining ½ cup dry scone mix; toss to blend and spread evenly
- Crumble scone mixture on top of fruit and spread evenly
- Bake bake at 375*F until browned and the fruit bubbles slightly, about 30-40 minutes
