Soaked Muslie

An amazing breakfast and snack idea, easy, delicious and super-healthy. Soaked Muesli or "Bircher Muesli" is more a method than a recipe, click the image for a nice demonstration by Jamie Oliver on YouTube.

INGREDIENTS

  • 4 cups 1869 Oatmeal
  • 1/2 cup plain yogurt
  • enough milk to cover
  • one grated apple
  • one grated banana
  • a handful of chopped dried apricots
  • a handful of chopped dried dates
  • a handful of crumbled walnuts
  • a handful of smashed or chopped almonds or hazelnuts
  • some garnish options on serving: fresh berries or other fruit, more chopped nuts, maple syrup drizzle, a sprinkle of freshly grated cinnamon

DIRECTIONS

  1. in a medium mixing bowl, add oats, milk and yogurt, mix gently
  2. add remaining ingredients, cover and refrigerate overnight
  3. portion into small bowls for serving
  4. add fresh garnish as desired

makes 6 portions

NOTE: Keeps well in the fridge for about 3 days
