Overnight Oats
An amazing breakfast and snack idea, easy, delicious and super-healthy. Soaked Muesli or "Bircher Muesli" is more a method than a recipe, click the image for a nice demonstration by Jamie Oliver on YouTube.
INGREDIENTS
- 4 cups 1869 Oatmeal
- 1/2 cup plain yogurt
- enough milk to cover
- one grated apple
- one grated banana
- a handful of chopped dried apricots
- a handful of chopped dried dates
- a handful of crumbled walnuts
- a handful of smashed or chopped almonds or hazelnuts
- some garnish options on serving: fresh berries or other fruit, more chopped nuts, maple syrup drizzle, a sprinkle of freshly grated cinnamon
DIRECTIONS
- in a medium mixing bowl, add oats, milk and yogurt, mix gently
- add remaining ingredients, cover and refrigerate overnight
- portion into small bowls for serving
- add fresh garnish as desired
makes 6 portions
NOTE: Keeps well in the fridge for about 3 days
