Weekend Waffles
Ingredients
- 1 pkg. GRAINSTORM Ancient Grain Pancake Mix
- 3 tbsp. organic cornstarch
- 1/2 tsp. baking powder
- 1/2 cup oil
- 1 cup plain yogurt
- 1 1/2 cups milk
- 4 eggs, separated
- 3 tbsp. organic cane sugar
Directions
- In a large bowl, mix together pancake mix, cornstarch, and baking powder. Set aside.
- Separate the eggs; set whites aside.
- In a medium bowl, whisk together egg yolks, oil, yogurt, and milk. Pour wet ingredients over dry mix. Gently stir together. Do not over mix. Set aside.
- Beat egg whites until stiff. Gradually add sugar and beat until mixed.
- Use a spatula or wooden spoon to gently incorporate the egg whites into the batter.
- Let the batter rest at room temperature for 10 - 15 minutes while you heat your waffle iron. (The waffles will be fluffier if you let the batter rest.)
- Spread batter into hot waffle iron. Cook until golden and crispy.
Add your favourite waffle toppings, and you have an absolutely scrumptious weekend brunch! Enjoy!
Note: Leftover waffles can be frozen and reheated in a toaster for an easy breakfast later!
