Weekend Waffles

Ingredients

  • 1 pkg. GRAINSTORM Ancient Grain Pancake Mix
  • 3 tbsp. organic cornstarch
  • 1/2 tsp. baking powder
  • 1/2 cup oil
  • 1 cup plain yogurt
  • 1 1/2 cups milk
  • 4 eggs, separated
  • 3 tbsp. organic cane sugar

Directions

  1. In a large bowl, mix together pancake mix, cornstarch, and baking powder. Set aside.
  2. Separate the eggs; set whites aside.
  3. In a medium bowl, whisk together egg yolks, oil, yogurt, and milk. Pour wet ingredients over dry mix. Gently stir together. Do not over mix. Set aside.
  4. Beat egg whites until stiff. Gradually add sugar and beat until mixed.
  5. Use a spatula or wooden spoon to gently incorporate the egg whites into the batter.
  6. Let the batter rest at room temperature for 10 - 15 minutes while you heat your waffle iron. (The waffles will be fluffier if you let the batter rest.)
  7. Spread batter into hot waffle iron. Cook until golden and crispy.

Add your favourite waffle toppings, and you have an absolutely scrumptious weekend brunch! Enjoy!

Note: Leftover waffles can be frozen and reheated in a toaster for an easy breakfast later!
